- Prepare the Cream Cheese Filling: In a medium mixing bowl, combine the softened cream cheese, 60g caster sugar, vanilla extract, ground cinnamon, and the optional pinch of nutmeg. Using a wooden spoon or spatula, mix until the mixture is smooth, light, and well-combined. You want to see no lumps and the mixture should have a lovely, uniform creamy texture.
- Fold in the Blueberries: Gently fold the fresh blueberries into the cream cheese mixture. Be careful not to crush them too much; we want them to retain their plump shape. The mixture should now be speckled with vibrant blue, promising bursts of fruity flavour.
- Assemble the Quesadillas: Lay four tortillas flat on a clean surface. Evenly spread about a quarter of the blueberry cream cheese filling over one half of each tortilla, leaving a small border around the edge. Ensure the filling is spread right up to the fold line. The tortillas will look generously loaded, ready for their other half.
- Fold and Prepare for Cooking: Fold the other half of each tortilla over the filling, creating a semi-circle. Gently press down along the edges to seal the filling inside. The quesadillas should hold their semi-circular shape, like little breakfast parcels.
- Cook the Quesadillas: Heat a large frying pan or skillet over medium heat. Once hot, brush the pan lightly with some of the melted butter. Carefully place two quesadillas into the pan (or as many as fit comfortably without overcrowding). Cook for 3-4 minutes per side, or until the tortilla turns a beautiful golden-brown and develops a slightly crispy texture. You should hear a gentle sizzle as they cook, and the filling inside will start to soften and warm through.
- Serve Warm: Once cooked, remove the quesadillas from the pan and place them on a cutting board. Let them rest for a minute or two before slicing each one into two or three wedges. A light dusting of extra caster sugar, a drizzle of maple syrup or honey, and they are ready to serve. The aroma of warm blueberries and sweet cream cheese will fill your kitchen, a sure sign they're ready to be enjoyed!
Notes
Ensure your cream cheese is well softened for a smooth filling. Don't overcrowd the pan when cooking to allow for even browning. These are best enjoyed warm, straight from the pan.
