- Prepare the Cinnamon Sugar: In a shallow dish or a small bowl, combine the 80g granulated sugar, 2 teaspoons ground cinnamon, and the pinch of salt. Stir well until the mixture is uniform in colour and completely blended. This is the magical coating that gives these rolls their signature taste.
- Melt the Butter Mixture: In another small microwave-safe bowl, melt the 60g unsalted butter. Once melted, stir in the 1/2 teaspoon vanilla extract, if using. The butter should be golden and fragrant with the vanilla.
- Brush and Coat Tortillas: Lay one flour tortilla flat on a clean surface. Using a pastry brush, lightly coat one side of the tortilla with the melted butter mixture, ensuring it's evenly covered. The tortilla will visibly darken slightly and become pliable.
- Sprinkle and Roll: Generously sprinkle about 1-2 teaspoons of the cinnamon sugar mixture over the buttered side of the tortilla. Make sure it's well-distributed. Starting from one edge, tightly roll the tortilla into a log shape. It should feel firm to the touch and hold its cylindrical form. Repeat this process for all remaining tortillas.
- Slice the Rolls: Using a sharp knife, slice each rolled tortilla log into 1.5 to 2 cm thick rounds. You should get about 6-8 pieces per tortilla. As you slice, you'll see the distinct spiral pattern emerge, and the pieces will feel slightly sticky from the sugar.
- Air Fry the Rolls: Preheat your air fryer to 180°C (350°F) for about 3 minutes. Arrange the sliced tortilla rolls in a single layer in the air fryer basket, ensuring they are not touching each other to allow for even crisping. You might hear a gentle sizzle as they hit the warm basket. Air fry for 4-5 minutes.
- Flip and Finish: Carefully open the air fryer basket. The rolls should be starting to turn a lovely golden-brown colour, and you'll notice the cinnamon sugar bubbling slightly. Using tongs, flip each roll over. Continue to air fry for another 3-4 minutes, or until the rolls are a deep golden-brown, wonderfully crisp, and smell absolutely divine with a rich, caramelised aroma. They should feel firm and crunchy when gently pressed.
- Cool and Serve: Once cooked, carefully remove the cinnamon sugar tortilla rolls from the air fryer basket and transfer them to a wire rack to cool for a few minutes. This helps them crisp up even further. Serve warm and enjoy the satisfying crunch!
