Ingredients
  

  • 250 g plain flour
  • 30 g granulated sugar
  • 10 g salt
  • 15 g baking powder
  • 120 ml milk
  • 1 large egg
  • 20 g unsalted butter melted
  • 1 teaspoon vanilla extract
  • Optional toppings: fresh fruit whipped cream, chocolate shavings, etc.

Method
 

  1. In a large bowl, whisk together the flour, sugar, salt, and baking powder. The mixture should be well combined and have a smooth texture.
  2. In a separate bowl, whisk together the milk, egg, and melted butter. The mixture should be smooth and free of lumps.
  3. Add the wet ingredients to the dry ingredients and stir until just combined. The batter should still be slightly lumpy.
  4. Heat a non-stick pan or griddle over medium heat. You should see a faint sheen on the surface of the pan, indicating that it's hot and ready to use.
  5. Drop the batter by 1/4 cupfuls onto the pan. You should hear a gentle sizzling sound as the batter hits the pan.
  6. Cook the pancakes for 2-3 minutes, until bubbles appear on the surface and the edges start to dry. You should see a golden brown colour on the bottom of the pancakes.
  7. Flip the pancakes and cook for another 1-2 minutes, until golden brown. You should hear a satisfying crunch as you flip the pancakes.
  8. Repeat with the remaining batter, until all the pancakes are cooked. You should have a stack of fluffy and delicious pancakes.
  9. Assemble the pancakes by stacking them on top of each other, with your favourite toppings in between. You should see a towering stack of pancakes, with a delicious aroma wafting from the top.

Notes

Feel free to get creative with toppings! Fresh fruit, whipped cream, chocolate shavings, or a drizzle of syrup are all excellent choices. Ensure your pan is at medium heat; too hot and the pancakes will burn, too cool and they won't brown properly.
