- Prepare the Chicken: Preheat your oven to 200°C (180°C fan/Gas Mark 6). Lightly season the chicken breasts with salt, pepper, garlic powder, onion powder, and smoked paprika. Place them on a baking tray. Bake for 15-20 minutes, or until the chicken is cooked through and opaque white in the centre, reaching an internal temperature of 74°C. The surface should be lightly golden.
- Shred the Chicken: Once cooked, remove the chicken from the oven and allow it to rest for 5 minutes. This helps keep it moist. Then, using two forks, shred the chicken into fine strands. You should hear the gentle tearing of the fibres as you pull it apart.
- Make the Buffalo Yoghurt Sauce: In a medium bowl, combine the buffalo sauce, Greek yoghurt, and apple cider vinegar. Whisk until the mixture is smooth and a creamy, vibrant orange colour. Taste and adjust seasoning if needed; you're looking for a balance of tang and spice.
- Combine Chicken and Sauce: Add the shredded chicken to the buffalo yoghurt sauce. Toss thoroughly until every strand of chicken is coated in the creamy, aromatic sauce. The chicken should look uniformly orange-red and moist.
- Prepare the Cucumber Ribbons: Wash the cucumbers well. Using a vegetable peeler or a mandoline (with caution!), carefully slice the cucumbers lengthwise into thin ribbons. Aim for ribbons that are about 1-2mm thick. You want them flexible enough to roll without breaking, and you'll see their translucent green colour.
- Assemble the Rolls: Lay out a cucumber ribbon flat on a clean surface. Place about a tablespoon of the buffalo chicken mixture at one end of the ribbon. Gently roll the cucumber tightly, starting from the end with the chicken, creating a neat, green spiral with the chicken peeking out. Repeat with the remaining cucumber ribbons and chicken mixture.
- Garnish and Serve: Arrange the finished rolls on a serving platter. Sprinkle generously with fresh chopped chives and coriander. If using, crumble blue cheese or feta over the top. The fresh herbs will provide a wonderful aroma and vibrant green contrast to the orange chicken. Serve immediately or chill briefly before serving.
Notes
Ensure cucumbers are sliced thinly enough to be flexible for rolling. For a dairy-free option, use a dairy-free buffalo sauce and a plant-based yogurt alternative. Resting the chicken after baking is crucial for moisture.
