- Preheat your oven to 180°C (350°F) and line a 12-cup muffin tin with paper cases or lightly grease with oil. This ensures your muffins release easily once baked, leaving them with that lovely golden crust.
- In a medium frying pan, heat the olive oil over a medium heat. Add the finely diced red bell pepper and sauté for about 3-5 minutes until it softens and the raw smell dissipates, becoming fragrant and slightly translucent. Stir in the chopped baby spinach and sliced spring onions, cooking for another 2-3 minutes until the spinach wilts down and its vibrant green colour deepens. Remove from the heat and set aside to cool slightly.
- In a large mixing bowl, whisk together the eggs and full-fat cream until they are well combined and a pale yellow, frothy mixture forms. This aeration helps create a lighter texture in your muffins.
- To the egg mixture, add the almond flour, baking powder, onion powder, garlic powder, salt, and black pepper. Whisk everything thoroughly until you have a smooth, lump-free batter. The mixture should be thick enough to coat the back of a spoon.
- Gently fold in the cooked chicken breast, grated cheddar cheese, and the sautéed vegetable mixture into the egg batter. Mix until all the ingredients are evenly distributed, making sure not to overmix, which can lead to tough muffins. You’ll notice the colourful ingredients speckled throughout the creamy batter.
- Spoon the mixture evenly into the prepared muffin cups, filling each about two-thirds full. The raw batter will look quite dense, but don't worry, it will rise beautifully.
- Bake for 25-30 minutes, or until the muffins are golden brown on top, firm to the touch, and a skewer inserted into the centre comes out clean. You'll smell a delightful savoury aroma filling your kitchen as they bake, and the edges will start to pull away from the muffin cases.
- Once baked, remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. This resting time helps them set and prevents them from collapsing.
