- Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined, being careful not to overmix.
- Stir in the chocolate chips, marshmallows, and graham cracker crumbs.
- Press the dough into the prepared baking tray and bake for 25 minutes.
- Remove the tray from the oven and let it cool for 5 minutes.
- Sprinkle the top with brown sugar and chopped walnuts (if using), and return the tray to the oven for an additional 2-3 minutes, or until the sugar is caramelised and the marshmallows are toasted.
- Remove the tray from the oven and let it cool completely on a wire cooling rack.
- Once the cookie bars are cool, use a sharp knife to cut them into bars.
- Serve warm or at room temperature.
Notes
Ensure marshmallows are evenly distributed for best results. For extra gooeyness, slightly underbake the initial cookie layer. Walnuts are optional, but add a nice texture and flavor contrast.
