Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter softened
  • 1 cup white granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk chocolate chips
  • 1 cup marshmallows
  • 1 cup graham cracker crumbs
  • 1/4 cup brown sugar
  • 1/4 cup chopped walnuts optional
  • Salt to taste

Method
 

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined, being careful not to overmix.
  6. Stir in the chocolate chips, marshmallows, and graham cracker crumbs.
  7. Press the dough into the prepared baking tray and bake for 25 minutes.
  8. Remove the tray from the oven and let it cool for 5 minutes.
  9. Sprinkle the top with brown sugar and chopped walnuts (if using), and return the tray to the oven for an additional 2-3 minutes, or until the sugar is caramelised and the marshmallows are toasted.
  10. Remove the tray from the oven and let it cool completely on a wire cooling rack.
  11. Once the cookie bars are cool, use a sharp knife to cut them into bars.
  12. Serve warm or at room temperature.

Notes

Ensure marshmallows are evenly distributed for best results. For extra gooeyness, slightly underbake the initial cookie layer. Walnuts are optional, but add a nice texture and flavor contrast.
