Ingredients
  

  • 250 g thick Greek yogurt or hung curd
  • 8 slices white or wholemeal bread
  • 1 small red onion finely chopped
  • 1/2 green bell pepper finely chopped
  • 1/2 red bell pepper finely chopped
  • 2 tablespoons fresh coriander chopped
  • 1 green chilli finely chopped (optional, adjust to taste)
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon ground cumin jeera powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons vegetable oil or ghee for frying
  • Optional: A pinch of chaat masala for serving

Method
 

  1. Prepare the Yogurt Filling: In a medium mixing bowl, combine the thick Greek yogurt, finely chopped red onion, green bell pepper, red bell pepper, fresh coriander, green chilli (if using), and grated ginger. The mixture should look vibrant and colourful, with all the fresh ingredients evenly distributed.
  2. Season the Filling: Add the ground cumin, turmeric powder, garam masala, salt, and black pepper to the yogurt mixture. Stir gently until all the spices are well incorporated and the mixture smells aromatic and spicy. Have a little taste and adjust the seasoning if needed to ensure a balanced flavour.
  3. Assemble the Sandwiches: Take four slices of bread and generously spread the prepared yogurt filling onto one side of each slice, making sure to spread it almost to the edges. Place the remaining four bread slices on top, creating four sandwiches. The sandwiches should feel substantial but not overly bulky.
  4. Preheat the Pan: Heat 1 tablespoon of vegetable oil or ghee in a large frying pan or skillet over medium heat. You’ll know the pan is ready when the oil shimmers slightly and a drop of water sizzles instantly upon contact.
  5. Fry the Sandwiches (First Side): Carefully place two assembled sandwiches into the hot pan. Cook for 3-4 minutes on one side, pressing down gently with a spatula. The bread should turn a beautiful golden-brown colour and feel firm and crispy to the touch, and you'll hear a gentle sizzling sound.
  6. Fry the Sandwiches (Second Side): Flip the sandwiches over, add the remaining 1 tablespoon of oil or ghee to the pan if needed, and cook for another 3-4 minutes on the second side. Continue cooking until both sides are a deep golden-brown and satisfyingly crispy. The aroma of toasted spices and bread will fill your kitchen.
  7. Rest and Serve: Remove the Crispy Indian Dahi Toast from the pan and place them on a cutting board. Let them rest for a minute or two, which helps them maintain their crispness. Slice each sandwich diagonally to create two triangles, revealing the creamy, spiced filling inside. Serve immediately, perhaps with a sprinkle of chaat masala, while they are still warm and crunchy.

Notes

Ensure the yogurt is very thick to prevent the sandwiches from becoming soggy. Greek yogurt or properly hung curd works best. Adjust green chili to your preferred spice level. Serve immediately for best crispness, optionally with a sprinkle of chaat masala.
